L’Abysse Monte-Carlo brings the art of Japanese sushi to the Hôtel Hermitage Monte-Carlo. Chef Yannick Alléno’s contemporary French techniques meet the skill of sushi chef Naoki Kikuchi in a dining experience inspired by the Mediterranean and the changing seasons.
The omakase menu evolves with the fishermen’s catch. Kikuchi works with carefully selected fish and prepares each piece of sushi with close attention to texture and flavour. Alléno adds his distinctive approach to cooking, sauces and extractions, bringing a French dimension to Japanese tradition.
